There's clearly a demand - I've seen an emulator run Mac OS on the Libretto - and Apple has had a shot at this in the past: in 1997 its doomed Apple eMate 300 was designed as a low-cost laptop for the education market.
As part of the Technology Enhanced Learning Environment-Web: (3) (TELE-Web) project, the team decided to purchase an eMate for each of the three classrooms in the study.
