Tuna is highly perishable and has been implicated in histamine poisoning because of high histidine levels found in the muscle of the fish. The essential amino acids are isoleucine, phenylalanine, lysine, methionine, threonine, tryptophan, valine, arginine and histidine. Histidine (#17080) was purchased from the United States Biochemical Corporation and DL-serine (#5688) and Llysine monohydrochloride (#6467) were purchased from the Nutritional Biochemical Corporation. |
