Having first sampled authentic Tex-Mex meals while living in Texas for a period in the 1960s, he was convinced that Mexican cuisine would one day become popular in Europe.
This is a delicious cuisine that is surprisingly healthy, but I have to admit, I have a soft spot for Tex-Mex cuisine as well.
