Transglutaminase cross-links both caseins on the micelle surface as well as those in the core of the micelles.
Dartmouth College (Hanover, NH) has patented a method for preventing the infection of a mammalian host by a microorganism through the administration of substrates for transglutaminases or antibodies against such substrates that inhibit the transglutaminase-mediated interaction of the microorganism with the mammalian host.
Some specific topics covered include the structure-function relationships of transglutaminases, transglutaminases and their substrates, Type 2 transglutaminase and cell death, and transglutaminase and cell-survival signaling.
