The new chemical strategy creates a whole family of compounds, each one a variation on natural antifreeze glycoproteins, the team reports.
Antifreeze glycoproteins are derived from certain fish that can withstand low temperatures; besides reducing initial freezing temperatures, they reduce the rate of ice crystal growth at temperatures below the initial freezing temperature.
Once growth starts at the lower temperature, there just isn't time for new antifreeze glycoprotein molecules to diffuse in and block all the sites.
